Okay, so I have to run around in the morning and won’t be able to write my Friday Blog post so I’m doing it now. Just want to recap the week (and yes I DID get my Rain yesterday my Seattle Soul-mates!): after the wonderful Sunday dinner of the country ribs and vegetable gravy over mashed potatoes, I went on to make New England Clam Chowdah & clam cakes and a few other things but can I just stop and talk about KALE?? …“Until the end of the Middle Ages, kale was one of the most common green vegetables in all of Europe. Curly leafed varieties of cabbage already existed along with flat leafed varieties in Greece in the fourth century BC”…..REALLY??? Ummmm….yeah, yeah, yeah. In New England, particularly Rhode Island, Kale is a Portuguese/Cape Verdean STAPLE (what “I” am) and we use it in traditional ways like in soup and I just like it sauteed in onions with neck bones sometimes. BUT!!!…and that’s a really BIG “butt” (well apparently NOT according to its “super-food” qualities all the rage now), they now have Kale CHIPS!! And they are about $7.00 for a 2 OUNCE BAG (and come in every flavor under the sun)!!!….I’ve FLAT-lined about now……
Anyway….THAT price tag is completely Unnecessary when all you have to do is buy a head or two of kale and strip it from its stem and rip it into bite sized pieces and spread it out on a baking sheet, drizzle with really good olive oil, sprinkle with a little kosher salt (and garlic and/or onion powder), and pop into a preheated 375 degree oven for about 10-15 minutes turning 2-3 times in between. When I say ADDICTIVE, I MEAN it! They are sooooo airy and light yet crunchy and salty (my favorite snack combo) and melt in your mouth texture where you just can NOT stop eating them. Thank GOODNESS they are a power food with hardly NO calories! Waaay better that potato chips to me any day. Make some tomorrow and let me know how you liked them, don’t let them get too brown but make sure they are crispy.
Moving on….It was always Pizza Friday/ Family Movie night in the Davis household every Friday and it will continue to be tonight with my homemade pizza and we are watching Disney’s “Brave” tonight (no…we have NOT seen it yet lol). Ronnie likes pepperoni, sausage, mushrooms and cheese. Renzi likes just pepperoni and cheese with black olives. And, your VPC likes white garlic sauce, caramelized onions, sun dried tomatoes, goat cheese and mozzarella of course. That’s the menu for tonight.
Lastly, it IS Superbowl Sunday and we are a big Football family (I know I have some NEW Word Press family members that do NOT even understand FootBall…I won’t mention any names lol, but they have some pretty FUNNY stuff to say about it and it really IS funny if I must say so myself lol), and Renzi and I were going to attempt one of those “Snackadiums” (football stadiums made out of food) but I have just way too much to do tomorrow and this weekend so maybe she and I will attempt one for The Oscars! hmmmm…..there’s a thought!
Returning to the GOAL line, I know there are so many debates about wings of pizza or chili. It’s WINGS all the way in our house on Superbowl Sunday so it’s gonna be a hot and sticky Sunday in here (along with Chardonnay, Sam Adams & Crown Royal, can you say Livin For The Weekend?), even though there’s supposed to be yet another snow squall/storm this weekend, it’s 37 degrees as I type this, 27 degrees in the morning and 19 degrees tomorrow night….life in New England, and I LOVE it!
