It was a nice and quiet weekend in our household filled with food and drink of course. We did our normal Friday Pizza & a Movie night….
….Then we decided to have a burger night and recreate “take-out” at home Saturday Nite complete with homemade french fry paper bag holders my daughter suggested….
with a cake for dessert (I just make them, I don’t EAT them) and you all KNOW I hate to bake! They SAID it was good…
Sunday we were in a BBQ mood dreaming of summer in all this snow that is getting VERY tiring…
so we made BBQ country style ribs with what started out to be “coconut rice” but I didn’t have coconut milk so I tried using pure coconut cream with water and for some reason it took 3 times longer to cook the rice in and was too sweet and the texture was more dessert like so I turned it into rice pudding adding vanilla, cinnamon and nutmeg. It was the first time my daughter had rice pudding and she loved it. I’m glad it didn’t go to waste. I occupied my time waiting for it to cook with…..

Now here on Coffee Cup Monday, I am faced with school vacation this week! My daughter awoke with a sore throat. Looks like it maybe time for Ramen noodles. I hate the ones in the package with all the sodium so I searched to find an alternative and found a great idea from Mark Bittman and tried it last week and it was delicious! You KNOW I now have to come up with my own idea as to what to do with this broth in a totally different dish, I’ll get back to you on it when I develop it. But try this when you get a chance, it’s delicious! Add 1/4 c. ketchup to 2-1/2 cups of water, 2 T. rice wine vinegar and 2 T. soy sauce, boil with a squirt of the sriracha sauce.
Serve it over boiled noodles of any kind then top with scallion if desired. You could also add finely chopped vegetables as well but I like mine just noodles and sauce at times. 
If my daughter feels better by the end of the week, we are going to take her to ex-Patriots Football Player Ty Law’s Launch Indoor Trampoline Park since it’s right around the corner from our house and possibly a trip to the Newport Mansions which is about 15-20 minutes away and is always fun. We are also entertaining an overnight trip to New Hampshire but we’ll have to play that one by ear. Right now she’s calling me for an out of school, cold morning cuddle, and movie session so I must go for now.
