Meatloaf Monday.

From budget fare to culinary inspiration…meatloaf by any other name is still meatloaf, or IS it?

In Austria they wrap it in bacon before baking it. In Bulgaria they put hard boiled eggs in the middle, peeled of course.  In Italy they sometimes fill it with ham and cheese and in Romania they make it with lamb or a mixture of organ meats. Those recipes sound like a lot more than meatloaf to me.

The last few weeks my Naldo (that’s my husband, and no that’s not his name but I think it fits him well) has been asking for vindaloo but I haven’t been in the mood for it until today. Well, I don’t quite have the ingredients for it today but I do have hamburger and I was going to make a Monday meatloaf but now I am going to let our craving for Indian food inspire me to make a vindaloo or Indian spiced meatloaf. I can only eat mashed potatoes with my meatloaf so maybe I’ll add some turmeric and yogurt to those…yummm, just thinking of it.
