No School Day |

The beautiful sunshine and daylight savings time with it still being light out at 7pm yesterday sure gave me Spring fever! So nice after all the snow we’ve been having. But it looks like RAIN today (and you all know how much I love my rain) on this Coffee Cup Monday! A Monday of no school for my daughters school, some kind of “teacher” day. So, she and I have a date for lunch and we have a craving for grilled cheese and soup! It will go perfect with the rain.

I love to have my grilled cheese on crusty bread with 3 cheeses and sun-dried tomatoes and arugula! It’s so yummy. We always have tomato soup with it but today I have Munchupa on my mind. It’s a stew from my Cape Verdean Culture/ Heritage. It take hours to make and it’s best on a cold day but it freezes so well and I happen to have some in the freezer! 🙂

I hope you all had a really great weekend! We had some friends over and I made a big pot of chili and rice with lots of toppings! I ended my weekend last night with some wine and homemade hummus and tortilla chips. Some of that hummus may make it into my grilled cheese sandwich today! hmmm……
