Friday’s Dinner Tonight

It’s pizza and a movie Friday for the kid as usual but my Naldo and I are craving seafood so I’m making my favorite scallop dinner that is pan seared in butter with arugula and served over a bed of my homemade remoulade sauce that is so yummy and served with paprika rice. I’m also going to make beer battered fish and chips and I just love the taste of it made with Sam Adam’s beer in particular, makes for a nice deep flavor.

I had a wonderful day of wine with my sister Shawnn Monteiro yesterday. I love when she is not on the road or on tour and has some vacation time to spend with me, it’s always fun. I gave her a new haircut (yes, I am also a hairdresser, jack of all trades lol) that looks so fresh and funky on her. We had pastrami wraps and sweet potato fries for lunch dipped in a sriracha mayo. The fries come out so crispy using cornstarch and soaked overnight in cold water;

I was telling her about this Winter White Truffle Butter that one of my clients got hooked on because I used it while making omelets for her daughters bridal shower brunch. She buys it every week now and loves it on everything from toast to lobster! Shawnn and I were saying how it might make a good dipping sauce for the sweet potato fries (mental note to try next time)! Winter White Truffel ButterAs if I don’t have enough to do (designing labels for my new spice blend line is getting very exciting), my Niece and I have started another business to keep us busy this summer.
