
I ask this question because, the only thing that’s reminding me that it’s Fall is the fact that it’s getting DARK early! And that’s it, because the weather feels like Winter! I usually don’t like the ‘getting dark early’ thing but at this time in my life I am embracing it! This time 2 years ago, I was rushing (in the dark) to get back from work to the homeless shelter we were in before it was too late because they had a curfew! I know…..as I said I would share some of those moments with you as to my absence for a while, but it was humbling and we are forever grateful to those that helped us along the way to get back on our feet after such an unfortunate time of a housing crises after renting for 7 years to be told we had to go immediately due to landlord selling the condo we were in. It was a lot to have to spend all your money in hotels, then to a homeless shelter but we made it through, and we had many angels on our shoulders pulling us up. We are forever grateful to all of you, you know who you are.
I am so grateful and relieved to be in our “Steppingstone” apartment! I spent the day hanging curtains, rearranging furniture, prepping my pantry and trying to make my small but mighty kitchen space work for me. It was a productive day. I only had time for a light lunch of salad and promised to share my salad topping mix with you. I simply mix dried cranberries, hulled sunflower and pumpkin seeds and walnuts together and store them in a covered container. When I want them (depending on what I am having) I just sprinkle them on plain or I dry roast them in a pan and put them on top of salad, ravioli and sauce, pizza, popcorn, yogurt…YOU name it!

I happily missed my own kitchen, stove, and cooking so very much and my family missed me and my food as well. It’s a very happy day! I tussled a bit with a shelving unit I have because I am ‘Extra” to say the least! I think it came out great when I was done, but of course I am not done yet! Take a look:


I know it’s supposed to be pizza Friday in my household tonight, but the day got away from me. Thank goodness for casseroles! I absolutely love the convenience of them for sure! I made a big batch of eggplant parmesan last week and thankfully I cut it in half and froze one side. All I had to do was take it out and heat it and supper was done with a side salad…don’t forget the salad topping!
