
Welcome to the Weekend!
I know it’s not for another 2 days, but December is really here! This year flew by, and we are grateful as it bought our new “Stepping-Stone” apartment to us. If you’re new, I call the place we live in now, our “Stepping-Stone” apartment because I strive to live in a tiny home on a plot with garden space so I can grow my kitchen and herb gardens and live peacefully in a quiet country setting for our retirement years. So, from here on out, whenever I say Stepping-Stone, I am referring to our apartment.
I know no one wants to hear me talking about snow and I get it. As I said, I celebrate the Seasons, and I don’t like the snow either if I have to be out in it but it’s nice when you are safe at home with food and drink stocked and no place to go. I love all the things that come with Winter, warm and fuzzy everything.
COOKING:
Baked Tacos
This recipe came out of sheer exhaustion. I just didn’t feel like doing all the taco stuff that comes with making tacos, so I had some boneless skinless chicken thighs that I diced up and threw in a pan with some onions and garlic. Then I added rinsed black beans, taco seasoning, Badia seasoning, salsa and cooked until half done. I had 2 boxes of those standing tacos in my pantry, so I stood them up in a baking pan, sprinkled white cheddar in the bottom of them, spooned the chicken & onion mixture in them, added more cheese and baked at 400 degrees for 12 minutes. When they came out, I added raw onion, jalapeno, diced cucumbers and pickles, lettuce and tomato. Topped with hot sauce and sour cream and dinner was done! Don’t rumple up your nose at diced cucumbers and pickles in tacos until you try it, it’s Bomb! This will be our new Taco Tuesday meal! I served it with refried beans with salsa, onion and cheese on top.

My daughter wants to add these Picture Lights with remote above her painting groups to light them up and the staircase leading to her space. It would really add to the design and really make it look like a gallery.

Another addition to the Art gallery Stairwell would be these lights for the stairs! They are motion sensor, rechargeable, LED lights. The hallway is pretty dark so this would be a great help at night.

One last item my daughter stressed that she wants to get for her doorway is the beaded curtain (remember those in the 70s?), she reminds me so much of myself at her age. It’s gonna look funky for sure!
