Coffee Cup Mondays: Leftovers!

Mondays are usually a ‘Leftover’ food day for us a I cook quite a bit on the weekends. I think one of the best leftovers is a roasted chicken. My husband has a huge appetite and so does my daughter, they enjoy food and are quite fussy so I should say they enjoy MY food. Thankfully. I have come to realize that if I want to cook a roasted chicken on the weekend, I need to cook 2 of them and they need to be on the hefty side if I even want to entertain having any leftovers. I think it’s a good idea to get into anyway because there is so much you can do with chicken. I roasted the chickens for dinner with all the sides and I had 3/4 left of the second one, which I stripped of most the meat then boiled the carcass with vegetables to make a chicken broth to freeze for a future use.

I like to make individual chicken pot pies like the store brand that everyone buys in those little tin pie plate shaped things. I guess they are cardboard now. I also like to make a batch of chicken salad, sweet and sour chicken (one of my favorites) and of course soup.

I have listed some of my favorite Amazon items below, to make life easier. I may make a small commission on qualified sales of these items and only list items I would or do use.

For my ‘Teacup Chicken Pot Pies’ I sauté in butter and oil, some onions, celery and carrots until caramelized, add some fresh chopped garlic then add in flour and cook it off. Then I add in some broth made from hot water and Knorr or use a freezer container of some chicken broth I made from the last chicken I roasted. I add in seasonings and chopped leftover chicken to the base. I make a quick food processor pie crust dough, roll out when rested, form to my oven safe teacup, fill with chicken filling, top with another piece of dough, flute edges, vent and bake. I like a thick topping of crust because it’s my favorite part of the pie. Yum.

When I am craving sweet and sour chicken and don’t want to go through making the whole thing from scratch, I don’t necessarily need the chicken to be fried golden, I just want to taste chicken. I also mostly want the sauce flavor, so I just make a quick heated sweet-sour sauce with pineapple juice, vinegar, soy sauce, brown sugar and a little garlic powder, thicken it with cornstarch and add pineapple chunks, pan fried onion and green pepper then pour it over leftover chicken pieces and serve with white rice. Easy, peasy, lemon, squeezy!

And of COURSE you know my favorite meal of ALL is SOUP! So, I love having left over chicken to add to some broth with veggies, and soup it is! Just give me some crackers or better yet, my homemade crusty bread and dinner is served, for me anyway! I like to have fun with my daughter trying different stuff we see online. I made this ‘melted snowman’ years ago when she was little but it’s still fun to do now as she still loves Winter as her favorite season.

AND, if they are not feeling leftovers- they get grinders for lunch or dinner! Easiest thing because I am not cooking if I made 2 chickens on the weekend lol. Monday will be Grinder Monday! Grab a bunch of Italian deli meats, some provolone, I add it to my homemade crusty bread and make my own sub oil and voila, toasted in the oven and done.
