

Superbowl Party Time!
Once again, it’s that time of year for a Superbowl Champion! We are routing for my “son Patrick Mahomes” team, the Kansas City Chiefs in my house. Our Cowboys are out, and I have been a Chiefs fan for a while now, so I am ready. Well, ready for the game that is, not quite the party yet! I always make a dish from each team’s city based on their hometown favorite dish, so I am still fine-tuning things a little bit.

Kansas City Chiefs Fans
I am so happy to see my Chiefs in going to the Superbowl! So, planning a dish will be easy. I will concentrate on Kansas City BBQ for my main dish. I like to serve it with buns, coleslaw, sweet potato fries, and I may make a pot of chili as well. I tend to cater to the team I like best so my main dishes will be KC based. My daughter wants to make her “brother” Patrick’s and Travis Kelce’s favorite food as well. Maybe we’ll make Taylor Swifts cookies too!

Philidelphia Eagles Fans
As Philidelphia is not our favorite team, we gotta give it to Josh Allen because he’s really a great player and person and I love his and Patrick Mahomes relationship of respect for each other’s talent. As I said, I cater to my favorite team’s dishes and make something secondary for the opponent. I have an idea to take their favorite Philidelphia Cheese Steak and incorporate them into nachos. Philly Cheese-steak Nachos it will be!

Superbowl Party Fan
So, you got to Superbowl time without your team, but you’re still a football fan and enjoy the game regardless but just happy to attend or host a Superbowl party. Well, you can always order pizza, wings and have plenty of beer and drinks or just make a big pot of chili, bake a few pans of sticky wings, put out a bunch of snacks and drinks on the counter and you have an instant party that even YOU can attend and enjoy as well because it’s easy.

KC Chiefs Dish
So, I am sure that I am making Kansas City BBQ. I am going to use a pork butt roast low and slow for 6- 8 hours (after marinading it overnight in fridge with a dry rub uncovered. I like to put onions and peppers and garlic in with it before I put it in the oven. When it’s done and shred-able, I will add some KC BBQ sauce and heat it through. I like to serve my pulled BBQ on soft brioche buns toasted and buttered and mounded with cool homemade coleslaw with pickles and extra sauce on the side. Eagles Dish
I love nachos of all kinds mostly or at least will try them differently, so I am excited to make the Philidelphia Cheese Steak style. I am sure someone is making them somewhere out there, but this will be my first time making them. They can’t be far off from my regular beef nachos except for the jalapenos and other Tex-Mex items. I imagine seeing them look like these in the photo I AI generated to the left. looking forward to eating them and letting you know how they came out.

It’s STILL winter so enjoy February as well and all the snow, if that’s your thing! The older I get, the more I do not like the cold, but the snow is pretty when you don’t have to go anywhere and sit by the fireplace with wine and good food.
