
Happy Monday
Mondays are my favorite day of the week and if it’s raining, it’s even better. I have always loved Mondays as a matter of fact, I was born on a rainy Monday in 1963. My Mom used to call me on rainy days and say, ‘I know this is your weather and you are enjoying it.’ I hope you all had a great weekend; I cooked quite a bit and enjoyed it myself.

Chia Water
I have been starting my mornings pretty early lately. I usually start with chia water for all of its benefits. I mix a tablespoon of chia seeds in with filtered water, and I also add Orgain Superfoods Probiotic super nutrition powder to the water.

Turmeric Tea
After I finish my chia water I follow it with Turmeric tea. I am addicted to tea at this point, so I have to have it daily. I mix in turmeric, fresh ginger slices, brown sugar and cinnamon. It’s so warming and soothing.

Overnight Oats
I also have overnight oats each morning. There are so many different recipes for this now and I can’t wait to try some new ones that I have seen. My go to is oats and almond milk with brown sugar, apples and cinnamon. I also add nuts to the top for added nutrition and crunch.

Hellmans Parmesan Chicken
I make this often; it’s a very simple recipe but always delicious and easy to prepare and quick to make. The only addition I make is adding Badia or garlic Dash seasoning to the mix before baking.


Work Island
This is the work island I have been telling you about. I have not received it yet but when I do, I will share with you what I do with it. I am excited to get it and can’t wait. It will make my life a lot easier in my kitchen.

In Like a Lion, Out Like a Lamb…
I can’t believe we are already at the end of February! Looking forward to march, it means spring after all. I can’t wait to open my windows and get fresh air in the house. Have a great week!
