
Hi everyone, so sorry I have missed you all the last few posts. We came down once again with illness. Thankfuly we have not had a bad snowy winter because I am sick of it already! We had everything known to man and we don’t even leave the house! No Road Trip Series this week, I will return with it next week.
After this last sickness, I decided to get back to healing my immune system and starting fresh after feeling so yukky for a while. I did have a great doctor checkup visit after however, my A1c is perfect, asthma is in control so that’s great. Knees on the other hand need work. Looking forward to getting second round of cortisone in the next week.
On my journey to getting back on a healthy track, my breakfast this morning was creamy cottage cheese with mixed nuts, my favorite fuji apples in lemon juice and tajin. I felt so refreshed and restarted with my huge cup of turmeric, ginger, cinnamon, honey tea of course!



I already planned and prepped my lunches for the week last night and took my walk this morning, so I am ahead of the game! I am in love with Sola Bread! It’s a low carb bread that tastes delicious with only 1gram of carb! It comes in different flavors, and it fits my diet to keep my diabetes at bay. It’s really great for anyone on a low carb diet for any reason. I cut off the edges, lightly brush with flavored butter or olive oil, stuff into muffin tin with 1 slice of salami, tomatoes, shredded mozzarella and Italian spice bland then bake at 350 for 15 minutes. They come out so crispy and melty. You can cool and freeze in a single layer then put them in a bag and take out as needed. Lift the salami, add Italian dressing, chopped pickles and onion and it’s like a mini-Italian grinder snack.









I have not decided on what to make for dinner tonight at all right now as I have so much to do in the house, but I have an idea. Read on to the following section and that might give you a clue as to what I am thinking could be a solution for dinner tonight. Maybe a salmon chowder that a chef I know makes well!





Guest Chef
The BEST part about being sick this time (if there is anything best about being sick) is that we had a guest chef cook for us. My very own daughter!
She made the BEST dinner ever! It was an intoxicating blend of Tajin lime chicken drums with a fresh made Pico with mango and orange twist with a homemade crema style sauce unlike the traditional, so much better flavor! Served with black beans and rice with spicy seasonings. And I don’t care for fried plantains but let me tell YOU (and myself lol), these blew my mind and changed it! It was absolutely delicious! She took culinary in high school and it’s showing!
My husband and I are still talking about it. The flavor is still lingering in my brain, and we can’t wait to have it again. We told her she has to make it at least once a week. 10 out of 10! Apples don’t fall far from trees Afterall. Proud of my girl, my “Mountain.”
