Welcome to another Coffee Cup monday! Grab your cup of Joe (who’s Joe anyway? lol), or Tea, like me and settle in.
The best part of cooking is creating new things in the kitchen based on your taste buds. I love coming up with new ideas and mixing things to find new flavor profiles that work together. This is my Quinoa “fried rice” idea which we loved! The Quinoa acts as the “rice” and I added chopped carrots, black beans, garlic and onion and a fried scrambled egg with soy sauce and seasonings. It was delicious.


Mango BBQ Chicken
I use a basic BBQ sauce base (ketchup, brown sugar etc.) and add Yum Yum Sauce, mango juice and Cholula hot sauce and chopped mangos for topping. I use chicken thighs for more flavor and bake low and slow for 1-1/2 hours at 350 then broil the top! Top with fresh mango dice pieces and scallions if you like. Jalapeno Potato Salad
I make my base sauce with Hellmann’s Real Mayonnaise (MUST have), vinegar, salt and pepper, Badia seasoning, sugar, garlic powder, celery and onion, minced pickle and jalapenos, chopped boiled eggs and my add in is a splash of pickle juice and jalapeno juice as well. Top with paprika and chopped scallion. NO mustard, no thanks. If YOU like it, add it in as well. I a sure there is a controversy on the mustard thing, but I just don’t like it in my potato salad, I prefer the vinegar for the acidic balance. Sometimes I use apple cider vinegar.

Homemade Tortillas
It can’t get any easier that this recipe and once you have them homemade, you won’t want the store bought any longer. You can store them for a day or freeze them for next time. Just add 3 cups flour, 1 teaspoon salt and baking powder with 1/3 cup vegetable oil, add some garlic and/or onion powder or other flavored powders, add 1 cup of warm water. Stir until shaggy, knead for a few minutes, divide into 12 pieces for large rounds. Rest for 15- 20 minutes under damp towel. Roll out 2 at a time thin using little flour, heat pan and add tiny bit of oil. Cook 35- 40 seconds per side until bubbles appear.
So, as you can see there are many different things you can do to try different flavors. How will you know if you like something if you don’t try it? That’s the fun of it. If you don’t like something, at least you tried, and no harm was done. Don’t be afraid to try new things, it opens your world to so many different flavors that entice your taste buds and make you more adventurous. Happy Tasting!
