Billy Ocean
“Caribbean Queen (No More Love on the Run)“, initially released as “European Queen (No More Love on the Run)“, is a 1984 song by Trinidadian-British singer Billy Ocean. The song won Ocean the 1985 Grammy Award for Best Male R&B Vocal Performance, making him the first British artist to win in that category.
Continuing our summer song theme, let’s cook up some Island food!

Islands

Caribbean Deliciousness

Conch Fritters
HISTORY: Conch, especially in fritter form, has been widely consumed in The Bahamas since the settlement of the islands by the Lucayan people although the increasing harvest of juvenile conches has negatively impacted their population. The dish is popular in Bahamian restaurants and was described by Time as “the Bahamas’ own original fast food”
- Conch minced before cooking to tenderize it.
- Meat mixed into a seasoned fritter batter of: cornmeal, chopped onions, peppers, celery and jalapeños.
- Lemon juice, tomato paste, black pepper and creole seasoning.
Serve with various dipping sauces, such as cocktail sauce, mayonnaise or ketchup.

Island Dreams
We may not all be able to hop a plane and take off to the Islands, but we sure can create the experience at home by making a dinner and drink inspired by them. I hope you make the dishes I shared; I can’t wait to myself.
