Monday Morning Coffee/ tea Pumpkin Coffee

  • Brew coffee with Pumpkin Pie Spice/ Cinnamon mixed in with the ground coffee
  • Add Pumpkin Flavored Creamer
  • Optional: Add Sweetener of your choice and cinnamon stick

Start The Day

I usually start my day with overnight oats and a boiled egg to get me moving and energized to take on home projects. I fill my small mason jars the night before with steel cut oats, almond milk, chia seeds, apples and a teaspoon of brown sugar or Truvia sweetener. I also do my salads for lunch in larger mason jars. I eat this way when recovering from a sickness because it’s easy on my system and slowly gets me back in the swing of things. For dinner I just have a protein and a vegetable.

Here are some great ideas above for your overnight oats so you don’t get bored with the flavors. Strawberry chocolate chip and maple brown sugar are two of my favorites.

Decorating

Here’s a glimpse of some of the rooms I’ve decorated in the places we lived. Below I have a before and after of an apartment we once rented in an old schoolhouse.

If you have an odd shaped room, Place the bed up against the windows and use curtains as a backdrop.

If your apartment looks like a loft, treat it like one! Don’t decorate it “shabby chic” go for the loft look.

If your furniture doesn’t all fit in one room, spill it over into the adjacent room and tie it all together with a common piece.

It was interesting living in an old school that my husband actually attended as a kid. It still looked like a school from the outside, but the apartments were good. The walls were so thick we never needed to turn the heat on.

It doesn’t matter how large or small a kitchen is, I HAVE to add an island! This “island” was a bar. It had two drawers and two sections with shelves, so it served as a fantastic island. It also had slate tile on the top, perfect for hot dishes.

Dinner Tonight

Usually after a full day of redecorating, which could be just rearranging furniture- I like to have a simple dinner for myself. Even if I make a big dinner for the family, I sometime crave something simple so I would have some chicken salad over lettuce and cucumbers with my red wine vinegar dressing or a bowl of ramen with boiled eggs, some meat from the dinner I make for the family and some nori seaweed sheets. So easy!
