


Monday Morning Coffee/ tea Cinnamon Iced Coffee
- Fill a Glass with Ice
- Pour in Coconut Cream (or 1/2 & 1/2′, Almond Milk etc.)
- Add Sweetener of Your Choice (or none)
- Pour in Chilled Cinnamon Brewed Coffee (just add a cinnamon stick to the coffee grounds in the brew basket before brewing)
- Drink as is, Stir, Top with Whipped Cream and Ground Cinnamon & Enjoy~

Is it summer or fall?
I was honestly confused over the weekend! This weather is like summer and even at night, the meteorologist said it was unusually humid for this time of year the last few nights. We had our air conditioner on for sure! I have been cold lately and even I was too hot. So, as I was ready to do a full roast and spread as my opening photo, it was too much and too hot. I opted for a ‘Summer” dish, shrimp scampi style pasta.

I add roasted garlic butter, chopped tomatoes, broccoli florets and Badia to some shrimp.

Simply Refreshing on a warm day and nice and light!

Always add plenty of fresh lemon juice and zest.

Weekly Prep Work
I usually spend my Sundays prepping food for the week in the Fall, it’s one of my favorite things to do on the weekend. I usually make 2 casseroles or roasts and freeze one and eat one for Sunday dinner. I prep my salads in mason jars and do my overnight oats. I also like to make a big family simple green salad, cut up some vegetables for snacking and prepare a big fruit bowl.

I also like making breakfast sandwiches and freezing them individually so my husband and daughter can grab one when they don’t feel like cooking because I am never going to buy those expensive, sodium filled breakfast sandwiches they sell in the market. Fresh is best and most healthy. I do egg, bacon and cheese on english muffins and sometimes it’s my homemade turkey sausage patties.

My daughter likes corn dogs and bought them from the freezer section in the market one day and they were not good. They are not good anyway, but I decided to make them at home. I used Kayem beef hot dogs (I use vegan ones sometimes as well) and I cut them up into bite sized pieces. It also makes them easier to dip and fry when they are this size. I make a batter out of cornmeal, flour, sugar, milk, egg, baking powder, oil and honey with Badia seasoning. Use wooden skewer sticks, dip and swirl hotdogs in batter poured in a drinking glass to make it easier to dip. Fry in corn or canola oil until golden. Drain on a rack. We only have these about once a year if I can control it. LOL

Bacon Wrapped Scallops
Staying with the seafood theme and the warm weather, I had some frozen scallops in the freezer (it’s like a nice surprise when you find something good in the back of the freezer from your last market trip) and you can’t get easier than bacon wrapped scallops in the oven! Serve with a creamy remoulade sauce and a side of rice. Dinner is served! I’ll serve with a nice cool crisp salad and my homemade red wine vinegar dressing.



No Matter the Weather
Believe me, I am not sad it’s nice weather. I just love the Fall and the weather is one of the best things I love about it. I like nice days with NO humidity and cool nights. I want to light a fireplace, electric or not! Happy Fall you guys!
