Welcome to another Coffee Cup Monday! I guess Spring is showing it’s face finally! I have to say it’s nice to open the windows and get some fresh air always. I started with my sink area. In the Stepping Stone, there are no kitchen wall cabinets, so I had to get creative with wall space to make things work for me. Thankfully I have a good size pantry.

I am in LOVE with this new dish drainer! It holds everyhting in it’s place and drains right over the sink and looks nice in this kitchen as the apartment is a bit on the ‘loft’ looking side. I got it at Walmart online, it’s very popular on TEMU as well but way less expensive at Walmart online, almost half the price.

Coffee & Tea Bar/ & Prep Island

I moved on to my coffee & Tea Bar. I finally got my new coffee pot and my instant boil tea kettle that I absolutely LOVE! It’s near my dinette table (due to no cabinets) so I put my dishes on it and utensils in the drawer. All my coffee flavor creamers are on the left of the bar waiting for me to replace them with the glass bottles with the spouts filled with liquid coffee flavorings. I am nowhere near done organizing but it’s cleaned. The weather starts you thinking aout “Summer Foods” like fresh seafood!

Summer Fish & Chips Recipe

Fish & Chips

Sam Adams Beer battered Fish & Chips.

I add a full Sam Adams beer to some seasoned flour and cornstarch in a bowl and mix until it’s like pancake batter. I season the flour with salt, pepper and Badia. I flour the cod filets with flour first and let rest, then dredge in the batter and fry until golden and crispy. Drain on a rack above a sheet lined with absorbent paper. Serve with homemade French fries that soaked in cold water overnight to remove starch for crispiness.

Cole Slaw

Freshly grate cabbage and carrots. Grate an onion on the fine side and use the juice, salt and pepper and Badia. Sprinkle with a little sugar or some honey and fresh lemon juice. Mix in homemade mayonnaise or Helman’s real. To Make Mayo: In a blender, add 1 egg, 2 teaspoons dry mustard or Dijon, 1 tablespoon white vinegar and 1/2 teaspoon salt. Turn on mixer and pour 1 cup vegetable, or olive oil by the drops to begin and slowly add more as you hear it thickening. Add to coleslaw. Add lore lemon for brightness if needed.

Tarter Sauce

Simply add homemade mayo or Hellman’s with relish, salt and pepper, Badia, lemon juice, paprika and a splash of hot sauce. Mix it all, chill and serve with fish & chips. There is simply no need for that store bought stuff unless you find a good one you like. It’s so simple to make a child could do it. Add the seasonings you like. I also add garlic and onion powder for more flavor but leave it out if you want it plain and creamy. Instead of hot sauce, add diced jalapenos, yum!! The possibilities are endless.
